Shiitake is an edible fungus native to East Asia that is now grown and consumed worldwide. Ayurvedic and  Traditional Chinese medicine has long regarded it as a medicinal fungus.

It's also known as a "sawtooth oak mushroom," a "black forest mushroom," a "black mushroom," a "golden oak mushroom," or an "oakwood mushroom."

The Records of Longquan County produced by He Zhan in 1209 during the Song dynasty in China include the earliest documented mention of shiitake cultivation.

The description of shiitake cultivation from that literature was later cross-referenced numerous times and eventually adapted in a book by a Japanese horticultural Sat Chry in 1796, Japan's first book on shiitake cultivation.

The Japanese grew the fungus by hacking down shii trees and placing the wood near trees that already grew or carried shiitake spores. Before 1982, these mushrooms could only be farmed in traditional places utilising ancient ways on the Japan Islands.

Shiitake is a Japanese word that combines shii for the tree Castanopsis cuspidata, which provides the dead logs on which it is commonly grown, and take, which means mushroom.
